Although, what I remember is the Indians ambushing the cowboys, while the goodies and the baddies were both white, fighting each other.

A lot of Westerns were about land though. Ranchers fencing off land, water rights disputes, mining claims etc.There have been quite a few western "style" shows and movies, especially on Paramount+ and Apple TV. But few of them have that proper western feel. They are mostly about acquiring or protecting land. Terrestrial TV seems to favour dating shows, reality TV and other claptrap. But that's the world we now live in. The masses bring in the revenue and apparently that's what they like

Most of the films supposedly featuring earlier history (mediaeval, Vikings, Romans) are total nonsense too but can still be entertaining.
Actually thinking about it, there are surprisingly few movies about the actual foundation, the war of independence. From a nation where a single date has such a huge significance, you'd think there'd be more.

I was surprised to learn that the first military use of a submarine occurred during that conflict. Such an incident does feature in one episode.
