Welcome

What surfaces will you be riding on and how far are you planning to go? Also, what is your budget?

Sounds obvious but get a bike YOU are comfortable on, if you hate riding it cos it isn't comfortable you'll soon stop.
Hybrids and cross bikes offer a little bit of both so maybe consider one of them.

Enjoy

If you are loaded get a pinarello, most fighters I know go running to up their cardio.

Any bike should help with that too I suppose.

Something easy to ride (no fatso tyres) on all surfaces, simple too, a fixed fork Hybrid with 32mm tyres would be my choice. I got serious on one of these and being able to hop from road to trail whenever I felt like it was a great advantage. My choices:-

Dawes Discovery - Specialized Sirrus - Trek FX, all good bikes that will provide a good amount of fun and versatility for not much money. Easy to sell on too.

An MTB is really the one which sounds most unsuitable, if riding on roads mainly unless you want it to be much harder going than it needs to be

A hybrid like the Subway above or if budget is even tighter, something like this is a bargain

If you have knee issues, whatever you do, make sure the bike fits you correctly and is set up properly in terms of seat height especially. It will probably need to be much higher than you expect.

Have you had your knee assessed by a physio - might be £50 well spent if you want to avoid making it worse (muy thai sounds like a knee unfriendly exercise potentially?!)

my knee comes and goes its like a sharp stabbing pain if I do a long stride or jump up a stair,no haven't seen a physio[not yet] don't get any pain from hundreds of kicks on heavy bag, I work in forestry and do lots of heavy lifting, dragging and walk on hills and uneven ground that can set it off.it doesn't stop me but I know its there which has an affect on whatever I am doing

If we spa at muay thai I will remember not to keep kicking your right knee over & over again then.
