Attach the mudguards using those safety whatsits used on front mudguards. Makes it easy peasy.

The only reason one would remove the back wheel from a fixie would be to remove the flesh from a pedestrian that was still clinging to it besides what crud is not caught in the baggies is soaked up by the ZZ beard so mudguards are not really necessary.
