I asked AI to show the 'real' me.
Cooked Basa fillets in a garlic, soy and ginger marinade. Side dish of roasted carrots, courgettes and potatoes. Never had Basa before but it's a nice meaty white fish.

Chilli for tonight, but it'll be a reheated batch out of the freezer. No cooking at all for the last week or so, the freezer was getting a bit too full.

Basa is a lot nicer than many a more spendy white fish, and it's very versatile. I like to turn it into giant fish fingers (Madam Lexi gets the trimmings), or wrap it in streaky bacon or cured ham (with a sage leaf tucked inside) and pan fried.

Most people don't realise that it is River Cobbler AKA a species of catfish.

Can’t seem to get on with Basa, think it’s the texture.

Boring carbless again. Smoked haddock, mackerel and peas. Overcooked the fish, peas were the highlight 😕

Ooh I do love a curry. Will check that recipe out. I honed my bread making skills during lockdown. I make all my flat breads. Have you ever tried making Peratha? It's a tricky thing.

No, but I do make pretty mean naan and pittas. As well as "ordinary" loaves.

Rogan josh and Lamb biriyani are up amongst my favourites but Lamb is so damn expensive. Especially since NZ has turned pasture over to Dairy produce.

I keep an eye out for lamb on yellow sticker, because yes, it's spendy. Although if you're not afraid of a bit of fat, then lamb breast still offers good value for money. Especially since it's a boneless cut.

Why isn't this called 'Reynard's cooking thread'?

If this was about sewing, it would be the 'Reynard's threads thread'..

I'm getting my coat, don't worry.

<Sorry to piddle on fireworks>

Basa fillet farming, particularly in Vietnam's Mekong Delta, raises environmental concerns due to intensive practices, water pollution from waste and chemicals, and potential antibiotic use, impacting the ecosystem and potentially posing food safety risks.

Here's a more detailed look at the environmental concerns associated with basa fillet farming:

1. Water Pollution:

  • Intensive farming practices:
Basa are often farmed in open net cages or ponds, which can lead to high concentrations of fish waste and uneaten feed.
  • Untreated wastewater discharge:
Farms often discharge wastewater directly into rivers and waterways, leading to pollution and harming the delicate ecosystem of the Mekong River.
  • Chemical runoff:
The use of chemicals for disease control and other purposes can contaminate the water, further impacting the environment.

    2. Dependence on Wild-Caught Fish:
  • Fishmeal production:
Some farms rely on wild-caught fish to produce fishmeal, which is used as feed for farmed Basa.
  • Unsustainable practices:
This dependence on wild fisheries can lead to overfishing and the depletion of wild fish populations.

    3. Antibiotic Use and Resistance:
  • Disease outbreaks:
Intensive farming conditions can lead to increased disease outbreaks, prompting the use of antibiotics.
  • Antibiotic resistance:
The overuse or inappropriate use of antibiotics can contribute to antibiotic resistance, a growing global health concern.

Praźone. Southern Polish dish, potatoes, onion, smoked sausage and bacon, with plenty of parsley and seasoning. Traditionally cooked outdoors in a large pot over a fire but oven works ok.
