My days of twiddling strange knobs are a distant memory....Honestly SL, you were a nurse, you know things about people that they'd rather you didn't know and you won't just twiddle a knob a little bit...

Where the cable comes out of the rear mech there's a little knurled plastic twiddler, twiddle it anti clockwise by 90 degrees.. Try bike. A/ still doesn't completely shift but better, do another 90 anticlockwise or B/ Goes all pants and worse, twiddle back 90 degrees clockwise then another 90, try that.
Either case, worse scenario...no worse off, world is still where you left it!
No, it's the one that is around the cable just where it exits the rear derailleur, it's called a barrel adjuster.
