I've had a nice coffee this morning. The hotel had a Costa machine so it was a triple espresso with my breakfast.

Yep. Most of the joinery work will be in green oak, so traditional mortice and tenon joints (mainly) with draw-bore pegs.

You won't lose much fitness while you're off the bike then, although you might need some larger tops after all that.
