oh yeah....crispy skin please.
That's easy to achieve, just lightly dust the skin side with Plain Flour after seasoning with Salt and Pepper and use a knob of Butter when frying the fish. :hungry:

Sausage or bacon rolls = brown sauce - preferably the HP or Branston fruity variety
Fish fingers or chips = ketchup
Anything else is wrong except for English mustard on cold sausage rolls.
