When they're worn can I just turn round my chain rings?

A lot of chainrings are sided and/or directional. Which ones are you talking about?

Even if they are otherwise symmetrical, the bolt-holes are likely to be recessed one side.

As above, most have some sort of chamfer to aid gear changes

Having said that .... if you run a single front chain ring, some companies do make a reversible ring

The engineering design allows for rolling on and off as you switch between the rings. It dont work backwards, sorry.

Wear does take place on all sides as it should be a snu fit of the links onto the teeth so it is fully supported to allow for even power transfer. you;d be surprised how much actaully wears on the "back" side.
