I did a search and came across this site https://www.sheldonbrown.com/calipers.html.

Given I have only cleaned and oiled the chain, attached a bell and lights, changed an inner tube, my maintenance skills are somewhat basic. However, I'm keen to learn. Is the above site of any use?

Well done for finding Sheldon Brown's site and that page.
But you tell us! Did you find that page on "Installing and Adjusting Caliper Brakes" helped you sort out how to adjust your calipers with the replacement blocks fitted?
Maybe have a look at some of the other pages. Include "Sheldon" in the searches you do.
Have you got a freewheel or a freehub and cassette (rear wheel)?

As I wrote previously my skills are basic, should've added' very'....okay, I watched a video to also help and the result is the brake blocks are on and there is at least a 1cm!! clearance at each side of the brake blocks to the rims. Also, I loosened the tension? on the cable and now the brake lever is slack. I don't know what to do first.....help!

When you slackened the cable, did you undasten the cable clamp? Also, have you unhooked any of the cable outers?

So very basic am I.....which one is the cable clamp, top or lower? I'm sure I have slackened both. I haven't unhooked any cables. But, I'm certain the cable was longer coming from the nut. Does that make sense?

Looking at your photo of the caliper, it seems that you have moved the cable about an inch/25mm (I think I can see where the cable was clamped before). That's far too much. The clamp is just before the free end of the cable. Loosen the nut, pull it through, and re-tighten. You might have to hold the caliper with one hand to prevent it opening too far.

.........and only one side making contact with the rim when I apply the brake.
