I have Hero 3 and Hero 4 Go Pros- both work well in the standard underwater cases, yes there are lots of settings but it really doesnt take long to find what you want /need. the gopro software which is free is pretty good fro editing too.
you can pick some proper cheap bargains up on fleabay as sheeples sell for the next model up..
I would add, wherever you buy the mask from, make sure it is tempered glass. - The glass will either say tempered, or it will have a "T" stamped on it. If you buy from a specialist dive shop that shouldn't be a problem.
Also before you go away, get some tooth paste about the size of a pea on your finger tip and rub the inside of the glass thoroughly until your finger is sore, then rinse it out. Sometimes new masks are more prone to fogging, even after you have spit in them. This helps stop it.
As to snorkels, you want a straight forward "U" shape tube, or one with a small deflector on the top. Anything with a ball/cage combo should be immediately disregarded. You may see some snorkels with a vent just below the mouthpiece. Unless you are a confident snorkeler, I would avoid those too. The flap which covers the vent and through which water is expelled rather than out of the tube by your ear, can let water in as you inhale.
edit - Don't even consider full face masks with a snorkel built in. They are crap, leak and in my personal opinion, should come with with a big warning stamped on them.
