In theory it should work on a SS 13th front using a 11-32 21th rear total 34th the total a SS 105 can cope with in theory.

I got two different things going on...
Specialized Comp 105 ( endurance).. I had an 11/32 cassette fitted with longer chain and he said I could use both the 34 and 50 rings..

Caad 8 105.. I was told not to use the 50 ring with the 11/32 only the 34.. something to do with the new wheel set up on the Caad 8 ?
Two different methods.. or is it two different bike fitters having there own view on things.
Dont know is my answer.

as @Peteaud says there is a lot of grey area in specs. I run a 30-40-52 front with a 9sp 13-14-15-16-17-19-21-24-27 rear with a 7/8sp RD3300 GS it can just do a 28th though shimano say 27.

The thing to do is get it up on a stand and run through the gears and just see if it operates correctly and there is movement left on the RD, if so chances are it will work.

I've used a 12-30t cassette on my 105 SS RD / compact crank without problems. It let me get to the point of being able to spin up some steep hills, and can now do the same with an 11-28t cassette.

Just buy a deore rear derailleur and put on what you like. Got one on my Giant SCR 2.0 and works fine with my STi Tiagra shifters. Wasn't expensive and when I took my bike for a service at Tredz he said he had seen quite a few bikes from the Valleys with them on.

Sorry to drag this one out but I've just changed a 13-23t to a 13-26t and as a cycling newby find I can manage almost everything. I'm not the fittest nor the fatest but are we making it easier to prolong the ride or to just to make it easier?

Depends where you live and how many hills you've got around you. I live in the Welsh Valleys so unless you want to ride the boring main road, everywhere you go you have to climb. I am not the best climber so I stuck an 11-34 on. Hills which I used to find difficult I can get up, and ones that I used to get up in bottom gear I can stay in middle ring for. Really made a difference in confidence about tackling some of the longer climbs for me.

Shimano SORA 50/39/30 triple crankset, 9-speed 12/25 cassette

Can I just buy any Shimano cassette even if they are listed as MTB? would I be able to go to 30t?

yes with a 2013 sora but you might need to change the chain

I have the Triban 3 with a 50/39/30 and changed the cassette to a 28t. This was right on the limit for the original 2300 rear derailleur so I swapped it for a new 'Claris' longer caged d/r and there is now bags of adjustment room on the mech. All things being equal, I see no reason why I couldn't now fit a 30t or beyond unless there are parameters I haven't considered! (You MAY need to change your chain length for instance and faff around with the 'b' screw adjustment)
I'm fairly sure the Sora mech on your T5 will be already a 'longer cage' version too.......these are generally fitted to triples to allow for the extra chain (and spoke/jockey wheel clearance) needed for a wide range cassette and higher tooth count/difference
Newer Shimano groupsets seem more capable of using 'larger' rear sprockets than the shorter 'old-skool' race bike systems allowed.

I am about to buy this cassette (11-28) to go on the Triban 5 just to give me a bit more gear on the rear up the hills (which I struggle on)

I know nothing about gears and chains, so will this be a straightforward swap?, my current cassette has done about 400 miles, should I buy a new chain as well and if so what chain?
You may need one, it depends if its to short, chances are it will probably be a little short on bigxbig without going through the RD, it should go round both and one extra link. In reality it is likely to work
