It depends on the rigidity of the chip. If the chips are soft/floppy/covered in gravy - slap them on. Crispy, long, thick - lined up.

I like mine (when I used to be able to eat them!) neat and tidy, otherwise they leap out all over the place and you lose chips!
It also keeps the sauce from dribbling out randomly...and down your white t shirt...why it is always a white t shirt?!

For the alignment crowd - use a potato waffle, or two. Same as chips whilst being neat and compact.

Proper alignment allows for a much higher packing density, so improving the potato to bread ratio. However it must be recognised that this leave a lot less space available for red sauce.
