Yes I meant seat post duh! Had one of those days
I swapped from MTB to road bike a few months ago and like you wasn't sure if I would enjoy a road bike . After a fair amount of research on my own ( trying bikes out ) I went for a giant defy 5 and I love it 
It has fixings for pannier racks and all I have changed is the saddle and tyres . Oh and the chain and brake blocks because I wore the first ones out

It's exactly what you need! However, the Specialized Secteur might be a better option for what you are thinking, as with that model there is provision for back rack as you most likely need to carry more stuff than what you initially might think..
