Its not just the 'extra sprocket' though - theres a lot more to the 5800 then the 5700

The cable pull is different to compensate for the awkward cable routing under the tape / through the frame - that's progress for you

Not sure I agree with that. Leaving aside the weight, which is largely irrelevant, I have not noticed 'more precise, quicker shifting'. 5700 shifts like it should do - click the lever and the mech moves up/down as it should. 5800 shifts in exactly the same way, one click, one sprocket.
