Toast in hotels is meant to go cold so the butter doesn't sink in and people don't use too much of it. The function of toast racks is to let the toast go cold.

Ah, but that's different as if you're eating toast as part of a cooked breakfast, it is reheated by the hot food and soaks in the flavour of everything to transcend into something more than mere toast.
