My dilemma for all winter/wet weather clothing is that I get too hot so need something that can be stowed in the jersey pocket.

I have exactly the same issue and I'm rapidly coming to the conclusion that I'm best of just getting wet when it rains! Pertex is the closest thing I've found to something that works for me.

I was going to treat myself to a new Garneau lighweight jacket that could convert to a gillet but hen concluded the same as you that I'd prob be better off getting wet if it can't be packed up and carried in the jersey pocket, I'd hate to be out on a ride and the rain stops but I'm stuck sweating inside a waterproof.

In my experience (and I own expensive Gore paclite and Event jackets) breatheable jackets will not breathe sufficiently if you're exercising hard. They're fine for commuting, pootling, hill walking etc, but for MTBing or a fast road ride, I think you're better off with clothes that keep you warm when wet. Merino is my favourite.
 
My Altura rides up on the sleeves, however its XXL (from last winter you see)

An "L" version of the same coat will "Fit" me but is worse in the arms

a XXL is about right on the arms.

This has been the story of my life when looking at new winter coats.

How to get round this ?

Buy an Endura.
Seriously, I've got a Altura something - now discontinued - which I have the same problem on. It doesn't look very cycle specific and gets worn more off the bike than on now. Same thing when I tried a Nightvision, and a Proviz (have read somewhere they are made by Altura so same fitting)

I've got an Endura Illuminite now and a soft shell. Both much better arm length fitting for me.
