We have a couple of tefal frying pans and a wok which are all pretty good. My favourite though is a cheapo sainsburys one which was bought in a camping emergency.

Do you mean Fenton is still using it?

No I am still using it on Fenton when he gets too uppity.

I hear carbon steel pans are the fashion these days. We bought one as a gift for the bro-in-law recently. I think it was a Türk brand pan.

I'll try to ask my brother, he's in the trade as it were...but he's a fan of circulon as mid range, e.g. http://www.johnlewis.com/meyer-infinite-circulon-skillet/p15365
or the tefal ones with the red spot
what's your realistic budget?

Cast iron. Heated to blue-white with a smear of oil to burn it in, then only ever brushed out with water, never any form of detergent. I use a drop of oil and a wooden spatula to scrape any burnt bits out, should the worst happen ( like the kids cooking supermarket bacon  in it ) but it now is totally non-stick with a visible coating of carbon . I have to watch that Mrs Cube doesn't put it in the dishwasher.

Same with the wok. Steel only, and again, heated and tempered using extreme heat and oil, and never washed in detergent.

Having tried expensive pans; ceramic and others. I have come to the conclusion that frying pans are a disposable item. We buy tefal. They last for 2-3 yrs and then need replacing.

Tefal work for me... not pricey, they last (just replaced my small tefal frying pan after 15 years) and the teflon doesn't bubble or peel (as it did on my friend's far superior very expensive 'professional' pan)
