Doubt you'll find a single chainring drop bar bike new for £700 (as the manufacturers seem to think it's ok to charge more for fewer parts )

This. I ride a...bike.
However I now do have a bike which actually fits into a class of bike, albeit nearly 30 years out of date. Apparently, it's called a "mountain bike".
By the time I'm through with it, it will be MY bike, and unlike anything else...

My gravel bike has two chain rings too. Although I think it would have been fine with the 1x - I'm a bit old fashioned.

I'd never heard of them, but I went for the Xtrada 5, reduced from around £650 to £430 in their 'refurb sale'...and then Scout discount on top made me do it!

Felt reasonable quality for a "cheap" bike - even has hydraulic disc brakes
Added some Ergon GP1 grips (I like a little comfort), and had him slice a couple of cm of the MASSIVE handlebar width - I'm not going to be rock-hopping!

A bargain for me to muck about with a little....although not in this heat (& we are away at a festival from Weds....)

Was in my local Aldi today and they were selling off the work stands for £9.99. Basic but pretty stable. Bought one just for washing bikes on so I can keep my best stand clean.

Depends what you need. A 42*42 seems quite low for me but maybe you'd want lower for heavier hilly touring. But that's not a gravel bikes specialty.
