Anybody got a recepie for a delicious victorian sponge cake?

Just buy one, or find some old biddy on the road you live on to make you one.
Or, join a church and go to some service or whatever and see if they have any cake?
Once you have found a good cake maker, treat her well, get her some nice biscuits, spend some time with her and get her making you some cakes.

I still need to find me a good flapjack maker, one that puts dates into the middle.
Theres a garden centre near-ish me that sells it, but i cant be bothered to ride there every day.
Someone at an open TT i did had made some, i wasnt sure which lady did though, there was 4/5 of them, i dont think i could of handled all that cake!

My Mum makes ace flapjack....

...anyway I'm home alone and actually running out of things to do, so I want to MAKE a cake. :smile:

Exactly, or get a pot noodle or something and lie about with music on, or the tv.
Can you not just do some normal thing instead of cook.

I am infact amazing at cooking Muffins, for GCSE food i changed muffin recipes and made a very nice one.:smile:

Here you are, Cubette's favourite:
6 oz Caster Sugar
6 oz Margarine
3 eggs
6 oz self-raising flour

grease two deep 8 inch baking tins

in a bowl cream the margarine and sugar together with a wooden spoon, beating it so it gets plenty of air into the mixture. Add the eggs one at a time and beat until they're completely mixed in. Give it a few more wallops with the spoon to make sure it's light.

Fold the flour into the mixture. Do not overwork it, else the sponge will be flat and tough.

Divide the mixture betwen the two tins and bake at 180 deg for 20 minutes or until it's the right colour and appears "springy".

Turn the two halves out onto a wire rack to cool completely.

Fill with a generous layer of jam (raspberry is my fave) and whipped cream, spreading each on one half and then pressing the two together.

Buttercream is made by blending together butter and icing sugar, poss with a drop of vanilla essence, at a ratio of about one butter to 2 sugar, or to taste. Try 3 oz butter to 6 sugar and see if it's enough to sandwich your cake!
