Cubist's date and walnut flapjack

10 oz rolled oats
6 oz marge or butter
4 oz muscovado sugar
2 oz caster sugar
4 tablespoons golden syrup
4 oz dates, cut into chunks
2 oz walnuts

Put the marge into a pan and melt it, adding the golden syrup and sugar until it goes all one colour and consistency. Don't let it boil

take it off the heat, let it cool for a few minutes and stir in the oats, dates and walnuts

Spread it into a 8inch flat tin, pressing it with the back of a spoon to get it into the corners and flattening off the top

Bake at 180 deg for 25 mins, checking after about 20 to make sure it's not cooking too quickly

Take it out of the oven and let it cool for a few minutes before cutting it into squares by scoring it in the baking tin.

Let it cool completely and turn it out. It's at it's best after a night in a storage tin.

To me the classic Victoria Sponge is filled with red jam, and has caster sugar dredged onto it while warm to form that lovely crunchy top layer.

Apparently my little nephew calls it Yellow Cake (as opposed to brown cake, my favourite).

I've asked my sister to make me a yellow cake when I go down in October, I never did have a birthday cake this year.

I want some cake now, so it's lucky I'm invited round to a friend's house tonight for knitting, tea and cakes!

Butter icing is good too!

Chocolate butter icing is best.

When we were kids, I always wanted a chocolate cake with chocolate butter icing and chocolate button decoration, but my sister always wanted a victoria sponge with pink glace icing and those little silver sugar balls on it.
