The 2013 specialiized Roubaix has a 11-32 cassette with Sora Mech.

So why cant my giant have the same, or better?

I live in a hilly area so the 11-27 (was 11-25) cassette is a bit of a pain.

Well, keeping the Tiagra 9 speed rear mech would it be possible to fit an 11-32 cassette?

With a bit of old chain and a cheap 11-32 cassette i now have it.

Standard 9 speed Tiagra Rear Mech, 50/34 front rings and all works well.

(going to change the cassette for a XT Version when funds allow.)

The rear mech determines the lowest gear possible by it's ability to physically fit under the biggest ring on the cassette, and it's ability to take up the chain slack for the whole range of gears, if it can do this it'll work. I have a short cage 9-speed tiagra rear mech and the biggest ring it'll take on the rear cassette is a 28T (in the manual it says 27T) and some attention is needed to chain length, too long or too short and it will cause problems.

Does the jump in gears feel massive? what's the ratio?Looking at a lot of new bikes Felt Spesh etc they all seem to be putting bigger cassettes on.

I know that 2013 equipment is being made to fit up to 32t, instead of the standard tourer solution of a mtb rear mech which doesn't work with the new 10sp mtb rear mechs (different cable pull)

Will try to get out for a good long ride at the weekend, but the short ride was fine. My intention was to runa 11-30 but these cassettes are not the easily available. I am not into racing as such so the jumps dont feel too bad, but i am used to riding moutain bikes so maybe that helps.

The 2013 Specialized Roubaix has 11-32 with sora (9 speed), The 2012 ?Giant defy 2 came with 11-30 Tiagra (10 speed) and i live in a hilly area so though i would have a play. The alternative would be an XT short cage RD but if the Tiagra works well i will leave it on.

I don't understand why! Maybe it is the Wiggo effect, they know lots of new people will be taking up cycling and will want some easier gears? I ride a compact with a 12-25 cassette and can not really see the need for a larger gear than 25 for all but the steepest of hills! (On a laden tourer yes, on a race bike, fark no!)
