If I am hiking/fishing etc, traditional woollen socks (keep your feet warm even when wet (rain, streams or sweat it doesn't matter), and don't let your feet boil either, like thermal socks do.
I use bamboo performance socks all year round. Winter I add overshoes. Never any problems with cold feet, although I do get very cold hands occasionally. This winter I am going for some Craft lobsters. So far so good, but it's not been properly cold yet.
Thick socks can cause more problems than they solve as they may reduce circulation if your shoes fit you properly with thin socks.
