If you mean the very hot spicy food I think it's Sichuan!!!!!!!!!!!!!!!!!!!!

Surely, it is neither, but an anglicisation of Chinese characters. Personally, I have seen more Szechuans than Sichuan. But, I am no expert on this and I note that Peking Duck become Beijing Duck at the stroke of a mandarins pen.
