Long the river as @classic says is fine that passers Rowntree park a nice big park with plenty of space for her to run round. The solar way is also good ride out with things to see along the way. Going along the river the other way is nice trip out too. You can get boat trip along the river too which is quite fun.
NRM is a good call as is Yorvik (Yorvik you can pit your own commentary as you go round German is on the list, if she'd prefer to use it) and the other sites own by York Archaeological Trust , Barley Hall , Micklegate Bar and the DIG the latter is hands one archaeological dig. You can get a combo ticket for all of them.

If you feel like a day out to the seaside you can catch the coastline bus to Whitby.
We use it all the time the views are great on the way, passers some lovely places, the drivers are lovely, the buses are new and like all buses in England are at the moment the fare it's only £2.
