Top tip of the day: 't Velootje in Gent.

I think it's officially closed down, but it seems the owner still serves beer. Worth a nosey inside even if you don't have a beer. Prices are very uppish.

Is that the one with the old bikes hanging from the ceiling?

It's a bit more complicated than that...
What loon said Belgium was flat !!!
It was, indeed, unexpectedly lumpy. Despite our own late start (sleep being the best medicine for unwellness) we briefly overtook the main peleton while they stopped for lunch. Before meeting up with them and sending them on their way so we could have our own lunch.

That meant that we passed an ostrich farm, but also (following our Dutch fietsknoop app satnav lady rather than a carefully recced route) had bastard pavé and comedy offroading. And had to take the marked, high path above the canal on the north side rather than risk what was probably a fine, fast, flat Southbank route because the phone's signal gave out and we couldn't see a decent online map.

We also wasted an hour in Hasselt because somebody hadn't packed the 15mm spanner and the chain started jumping on the outskirts, so we had to find a bike shop so that we could adjust the eccentric BBs. But that did mean that @rvw got chatted up by an old bloke playing lute music (not Dowland, I think - perhaps something German through his phone on his bike).
