Tasty ways to eat veggies?

Ok - final answer. Whatever you eat now - just eat less of it - and cycle more. Don't get hung up on vegetable 'haute cuisine' - it is clearly distracting you from doing what you should be doing - which is simply eating less of whatever it is you eat now - and exercising more.

You don't need tips on vegetable preparation - you just need some self-discipline.
 
I like to roast/bake a variety of vegetables.

Potatoes (in wedges), sliced carrots, parsnips, onions, mushrooms, aubergine, courgette, garlic cloves, tomatos, mange touts, etc. A generous drizzle of olive oil and a liberal sprinkling of Rosemary and thyme, plus some salt and pepper. 200 c for 25-30 mins.

Delish!

Yum. Olive oil is healthy, but a generous drizzle of it may not be so good for weight loss! You could try a slightly less generous drizzle of olive oil or - my preference - more cycling!

Cauliflower mash is pretty good. No need to add milk or butter. Just some seasoning and a bit of mustard, and some parsley if you have any.

When I was a veg (since broken by the lure of the bacon sandwich) I used to make a lot of curry. Spices, herbs and chillies help to keep things interesting. If you have a garden, grow your own herbs.

One of my favourite veg meals is risotto. You can add almost any veg to it and it still tastes good, as long as you season it well. No need to add a load of butter, as may recipes say - I just use a bit of olive oil. A small amount of grated cheese for extra taste if you wish.
