I did nearly 600 miles over the last six and a half days of my Spain to Uk tour in June with 20kg of panniers and tent including one day of 140 miles. That was after 4 days in the Pyrenees. I'm in my late 40's and have a dodgy back, not that fit.

My training was simply commuting to work and back daily 8 miles each way, with the odd 30 mile sunday ride thrown in. No more. I think the first 4 days in the mountains kind of got me in the groove

Expect the unexpected, I had a knee issue arise (never had knee problems in my cycling life) so munched on Nurofen plus, had 3 bottles on my bike and religiously kept myself hydrated (thankyou French graveyards)
As for my diet .....err what diet
.. I was fuelled by pain au chocolat's, evening meal was something out of a tin, every night!!
