No to the plastic, unless you are positive it is bone dry first.
I've stored fabric parasols and various fabric panniers etc in a shed without too much problem.

Do make sure it's mouse proof, we lost our trailer tent canvas to the mice this year, and only noticed 2 days before we were due to go away for a week. Never though it would be a problem since it was stored off the ground, but the little buggers get everywhere..

As above, Mice are the big worry, they will love it for a winter store.
I store a tent and what I use is a metal locker, I actually got it from the dump but basically a metal cupboard. Sure they must be around in secondhand office places.
Tents are quiet easy in that if you have a square space they fit an if the space is oblong they fit.
Our mice go through wood and plastic easily.

The colder weather will get it damp anyway. Fold/roll it up after allowing it to cool for storage outside. If you spot any mould at this stage treat before storing.

Should have said, if you have a loft that's probably the best place. The surviving canvas from the TT is now in my loft, where I should have put it all in the first place.
Thanks. It's huge when it's all in the roller bag and too heavy to get into the loft, so I might separate it out and carry it up there.
Thats were my 11 man Icelandic is kept. The poles & pegs are in the shed however.

We bought a big dustbin and keep the tent in that in the shed with somwthing heavy on top. Mouse proof and water proof in case the shed leaks.

May I also suggest that you get the tent out and inspect it carefully BEFORE you actually want to use it next. My daughter and I had a pretty uncomfortable week in Spain in a tent that I got down from the loft and thought would be fine, but which turned out to be anything but.....

Put the tent in the shed, and then put the shed in the loft. Obvious really, surprised you didn't think of it.

Nah. Put up the tent and put the shed in the tent. Keep the tent bag in the shed.

The benefits of being able to check the tent for leaks any time before departure are pretty obvious.

I'm surprised that you didn't suggest it. @swee'pea99

Oh, and as a bonus, if there's a deluge the day you need to strip the tent to pack it for your holidays, the tent bag will be dry and will stop the boot of the car from getting wet.
