Hi there

What is the best way to loosen a stiff seat post? I need to take it out because I need to adjust it.

What is the best way to loosen it and what do I do in terms of paste when I'm adjusting the height and putting it back in?

Loosen the clamp right off and spray penetrating oil liberally down the between the post and seat tube leaving it for an hour or so to soak in, then start to twist the saddle and post, it may need more oil but eventually it will move.
Once out, thoroughly clean the seat post, and the inside of the seat tube.
Put a thin smear of grease on the seat post and reassemble.

Kinda depends what materials the frame and post are made of.
Lots of people have recipes for removing stuck posts. I don't I'm afraid.

But to answer your question about what to use putting it together, I use copper grease, but bear in mind that I am an idiot so that may be the wrong thing.

... making sure not to allow the penetrating fluid to reach the bearings in your bottom bracket ...

Penetrating oil - is that GT85?
 
Penetrating fluid will do very little to release a seatpost which has stuck to the inside of a seat tube through the process of galvanic corrosion. If loosening off the clamp and twisting the seat post doesn't move it, the usual next step is to remove the wheels, turn the frame upside down and clamp the top of the seatpost in a vice - taking advantage of the extra leverage afforded by using the frame to lever it out.

If that doesn't work you'll need to decide if the value of the frame is greater than the cost of taking it to a bike shop or even a frame builder* to have them remove it. *Plus the cost of repainting it after.

All depends on degree of how stuck, and how determined you are to unstick.

Not sure what your stuck Seat tube is made from.

But I bought a frame not long ago with a stuck post. One that someone had previously failed on removing.bI let penetrating oil soak in overnight (Probably didn’t do much good tbh)…….

But what I did manage to then do was find another tube that slid down the inside of the stuck post really snuggly. This meant I was then able to squeeze the post(s) REALLY tightly in a vice without crushing / mis-shaping it. And this ultimately meant I could then really put some force into using the frame as a lever to twist it off the now static post in the vice…..
