Haggis in place of the mince. 
Although I would not call it Spag Bol due to death threats I would receive from my Italian colleagues, I concur. However, I always add a spoonful of Marmite in too.

To answer the question though, red wine and pancetta, I try to keep it fairly close to what it should be.
