I want to make some sloe gin, but every recipe online seems to want a different amount of sugar. I know there will be a certain degree of taste preference but it varies between 3oz and a pound!

Any ideas? I've got 70cl of gin, and up to a pound of sloes.

Err on the side of caution, as you can put more sugar in when it's finished, but can't take it out...

Hello Arch, we make this most years, in fact I have 1 litre of sloe gin and 1 litre of sloe vodka on the go as we speak. I always put half the weight of the fruit in sugar in it, but as a rule of thumb the longer it ferments the less sugar is needed, after saying that, I have never used less than the 2:1 fruit to sugar ratio as we try to leave it for at least 6 months. We also have strawberry liqueur and rhubarb schnapps on the go too .
