The gravel bikes ability to "go anywhere" can't be overstated. If I had to have only 1 bike (shudder), it would be a gravel bike. I wouldn't fixate too much on the number of chain rings either.
The range on the single ring shouldn't be an issue for most riding. Mrs kes has a single ring gravel setup, and a "proper" road double. She only really misses the smaller gaps between gears when putting in some serious miles; as you get more fatigued it becomes more important.
