Pretty sure the Hunt wheels are just Kinlin Xr31 rims. Nothing wrong with them but see if you can find a wheel builder who will build you a set. Personally don't rate the hubs Hunt use. Light but not great long term based on experience of friends.

look at it another way @cool_hand, what is it about the rims you don't like?

105 are decent hubs, so a good starting point for the wheels, its not like they are some no brand stock hubs wheels that some manufacturers put on bikes to save costs. You could just get a wheel builder to re-lace them with different rims, although i'm struggling to see what you are going to gain over what you have?

Or are you gong to sell existing wheels to buy something else, or maybe think about doing this to up your budget, as £250-£300 possibly wont get you anything better than your 105 hubs laced to mid range rims?? i.e. Spa's 105 hub / kinlim rim wheels are £225-250?

Or sell a kidney* and get some Zed's they have small promotion on at the moment

Dunno if still available but Fulcrum Racing Quattro are bomb proof for a heavier rider. Had hand built SPA wheels myself once, didn't last long before the spokes literally got ripped out of the flange (Tiagra hubs, as I recall).
