Anyone know if Phil Wood 6805 bearings would fit a Shimano Hollowtech 2 Bottom bracket?

Don’t know but why don’t you ask Phil Wood? You’ll need to disassemble the Shimano cups of course.

Only if the Hollowtech takes 6805's (see if there is anything printed on the rubber dust cover). TBH, for the cost, it's just as cheap to replace the lot.

A standard 6805 (25x37x7) bearing won't fit as slightly too deep- you need the 6805N (25x37x6) version.
