Do I just replace one sprocket?

Yes, just the sprocket on the hub. This is what you want, and as I said earlier, possibly a chain (1/8" chain, different from a derailleur bike).

Even if you don't feel confident yourself, anyone you know with reasonable mechanical knowledge should be able to fit a sprocket on an SA hub.

The alternative is a 40 tooth chainwheel but good luck finding one of those on a cottered crank.

Yay! She's here!!!!

Went on the train to collect her, was very proud on the train with my pretty bike. Coming home up the very big hill wasn't as bad as I expected and didn't have to get off and push too much! Caused a bit of amusement to some workmen watching me trying to pull out of a junction that was uphill - took me about three go's!

Brakes and gears are working, tyres needed a few puffs of air, but didn't want to pump them too hard as it appears to be the origional tyres so I'm afraid they'll pop!

Very pleased with my purchase, think my bike collection is now complete!

Steel rims provide poor braking in the wet. Ride with anticipation and you shouldn't have a problem.

Fibrax raincheater leather brake pads will help.

It's nothing to worry about in reality. I have many steel rimmed bikes and have always been able to stop when requested. There is often an "oh shoot!" moment when you pull the brakes on a wet day but they bite eventually if you pull hard. Just allow for the extra stopping distance.
