Why the eggs and why raw?
Eggs have vitamin B (especially B12), vitamin A, vitamin D, vitamin E and vitamin K. The yolk contains vitamin A, D, E and K and minerals such as iron, calcium, and phosphorus. The egg whites are 11% protein and also contain amino acids. It's my opinion that a lot of the goodness is destroyed by heat (and rather defeated as an objective if fried for instance). The UDO oils I mention are the same...heat 'em and they're nowhere near as good.
They're always free-range and it's quick and easier than cooking them when back after a ride. And yes, I know it's old school but I do give them a whisk.
