Does anyone know of any garage air pump that goes to 8 bar most I've came across is 5 bar or 5.6 ?? Any help appreciated

Anywhere that HGVs use to inflate tyres. They use up to 120 psi..
Not many petrol stations have them!

I'd be very wary of using a garage air line to inflate bicycle tyres to 120 psi - it's too easy to over inflate because they deliver air at a much brisker pace than you can deliver via a track pump or hand pump.

You have checked the tyre pressure afterwards with a seperate guage.
Car tyres are a higher volume, but a lower pressure than bike tyres.

The trouble I'm having is that due to not having a presta valve pump I'm using a regular pump with the adaptor and it's just not getting the correct pressure it's inflating the tyre but not enough the pump is reading 4 bar. The tyre is up but still a little squidgy.

AFAIK petrol station ones should be kept accurate IF they are charging for it as it then comes under weights and measures. If it is rated below the max pressure of tyre/tube combo it shouldn't make any difference how fast it fills. Flow and pressure are 2 different things. I've filled the ships bike tyres with a 8 bar pressure supply line without problems, and the compressors are a lot bigger than anything on a forecourt.
