https://smallpdf.com/pdf-to-word to let me edit in word and then resave as PDF or keep in Word format.
Works really well on both Mac and Windows and also has other conversion options.
Yes - a simple web based conversion tool is the most convenient and then you can just use your normal stuff that you are familiar with
you just need to check the quality of the stuff in the converted file
e.g. pictures
I used to use them a lot for job applications - I used to get the job requirement - which are normally to be found ina table
then use the table - delete the details and use that column to explain how well I complied with the requirement
so my main concern was how well it converted tables - and there was a huge variation
so I suggest being familiar with several different ones and trying them out to find their good and bad points
