For your LEJOGI trip you need to look at how long do you plan to do it in, if it a fast trip, then you need to keep you equipment weight to the minimum you can get away with two panniers. If you plan to take a much longer time to complete it maybe carrying a more food and clothes then go for two smaller panniers up front as well, another factor often not taken in account is your own body weight, if you are of a heavier build, then moving some of the weight from the rear to the front panniers will take some of the strain off the rear wheel.. Bear in mind that front panniers will change the handling of the bike, so you need to practise cycling fully loaded before you set out on your trip. With front panniers you have the choose of low loaders or high loaders, personally I always use high loaders, as I like to ride off road for parts of my trip if I can, and low loaders can get caught in heather, undergrowth and if the track is flooded it prevents the panniers acting as a brake.
