There is an information sheet by reach, which is a charity for children with upper limb deficiencies. It basically details how to adapt a bicycle for children with one useful arm. A lot of this could be useful for adults as well.
I'm also a one armed cyclist and happy to share my set up if useful. A small matter but just got new cycling gloves and have no need for the right glove so looking for a left arm amputee to donate to or swap with. Let me know.
There's a one-armed cyclist round here who seems to do ok on a conventional flat barred road bike. Don't know how he fixes a puncture, though; maybe he uses Marathon Plus tyres and subscribes to a rescue service, or has a helpful partner with a car.
