that's easy - I hate raisins and sultana's so use (vegan) chocolate chips instead.

Have you tried cheese scones yet, Maz makes them but with a scone recipe, not a sourdough but hers are fantastic.

Depends what pastry.... when I'm rolling out my pastry for mince pies I use icing sugar.....

This was for beef suet puddings. In my defence the icing sugar was in a paper bag similar to the plain flour & it worked quite well. They were only slightly sweet.

ahh - no, I can't. I'm allergic to dairy products and have been for the last 6-7 years, but I used to make a mean cheese scone when I ate them (mind you I still do apparently, I just can't eat any of them). and allergic as in anaphylactic shock, not intolerance sadly. The chocolate is 80% dark chocolate chocolate chips.
