This is a common problem when using old blocks with new rims. The blocks do become glazed and especially Shimano ones which are made of hard material. Try using a rough file on the blocks but better still replace the blocks with Koolstop Salmon. Doing this will not stop the squealing but it will stop the Shimano blocks wearing out your new rims and they will last much longer with the softer material of the Koolstops.

I'm also going to second the suggestion of Koolstop salmons -I've found they are gentler on the rims, provide better feedback and seem softer than other pads so they are probably a good bet to try to reduce or eliminate that brake squeal.

De-glaze the pads and toe the backs (trailing ends) out by the thickness of two layers of a cornflakes packet flap.

Yes of course but nothing with added sugar because if any of that gets on the brakes you've got a serious problem.

I've de-glazed the pads already which helped a bit but yet to toe the pads out, off on an evening ride later so will toe them and see how that works. I have been umming and erring over the koolstops but because the 105's were providing such efficient braking I didn't feel the need to swap them just yet, didn't realise they were such a high compound so will be looking to get some koolstops now.

They are very good, very nearly as good as coolstops and much cheaper.

I thin you`ll be able to get them cheaper with a bit of googling.
