My LBS only guarantees a truing to within 2mm. It is harder to true a bent rim than build a straight one from scratch.

If this is done then what you have is a wheel with uneven spoke tension as some spokes will be tighter in order to pull out the kink in the rim. This will inevitably lead to more spokes breaking in time.
