Sit on the bike, then mark where your hands are at the point where you don't feel too stretched out, the bars may have markings on to guide, but I would do it in small increments, as you can't put it back if you cut off too much.

The tip on the Park Tool Video is good about doing a press up to measure where your hands fall naturally is a good one to give an idea of where you need to be width wise.
