Birthday dinner, I was 56 Thursday. I used to have a boss that celebrated that as Invasion of Poland Day.

My first foray into fudge making.
I fear that it's not going to set,it's been 3 hours now and it's the consistency of wallpaper paste.I might have to buy a sugar thermometer for my next attempt.
Not that I'm any better but I think it's generally darker coloured than that so probably didn't get up to a high enough temperature. (I don't know how to make fudge but make a caramel layer when making millionaires shortbread, you might be able to find a recipe that suggests a lenght of time to boil it to get the right boil.)

The recipe said boil for 15 to 20 mins whilst stirring all the time,and when it reaches 115 degrees take of the heat.I boiled for 15 mins but could only guess the temp as the only thermometer we have is for meat and doesn't go high enough.So you may be right it may not have been hot enough.

When I boil my caramel for half that time it definitely goes darker than that.... But maybe that's due to different ingredients?
