Just an update, I ended up getting the Gore Equipe GTX Cap. Found it for a steal at £15 including delivery. Link below in-case anyone is interested. Hopefully it's a legit site...

Will continue to look for a proper winter cap with ear covers. Thanks for the suggestions guys.

Think this is an updated version of the one vickster mentioned, looks pretty good.

Personally I just use a headband to keep my ears warm in the winter, or if it's wet then a cycling cap under the helmet with a buff to keep the ears warm.

I linked to that in my original post. It does look good but I haven't found any reviews for it yet. I'm going to see if I can track down a store with it in stock tomorrow. Interestingly, on the Mavic website the RRP is £22. Chain reaction cycles are claiming the RRP is £25 and that they selling it at a discount of £22.99! Accident or genuine attempt to mislead?

Just tried that on. Was pretty impressed. Seems ideal for all but winter cycling. I'm tempted to get it, and continue my search for a winter hat.
I would definitely recommend it  But i think you could be right there. I may have to wear a thermo beany on the colder nov and dec mornings

I really do like Sealskinz products, so gone for this @ £14,00

Local store pick up on Monday

FWIW I've combined a Vaude waterproof helmet cover with a Buff to cover my ears and neck. Keeps me as warm and dry as I need to be. I had a (non-waterproof) cap previously and didn't get along with it for various reasons.

I wear a Polar Buff under my helmet in Winter. My commute is 18 km and even if it is below freezing and raining my head stays warm. If it gets wet I just put it on the radiator at work anf its dry for when I go home. It keeps my ears nice and warm and I can use it round my neck if its not raining. You cant do that with a Cap.

i bought one from planet x last year, waterproof to a point but I don't like the great big planet x emblazoned across the peak.

I think I will purchase the sealskinz one from evans.

I ordered the mavic cap from chain reaction after reading this thread and it arrived yesterday.
First impressions are very good, it's very light but I feel warm enough for winter, it folds up small, has a reflective strip running round the edge of it and fits perfectly under my kask protone lid. I might run it under the tap later to test how waterproof it is!

I used my BC membership to get 10% off ( a mighty two quid !)

Size wise, I'm a 59cm head so I expected a tight fit but in short it's not, I can hardly feel it's on.

Cheers Stuart.
