Fork in left hand for me as is conventional, I'm left handed, but fairly ambidextrous. I used to use chopsticks left handed, but have relearned to use them right handed to fit in at NT's folks table.
And forks are held with the concave side uppermost when eating with a fork alone (scoopy food like pasta or rice), but concave side down and food pushed onto the back when eating with a knife and fork.

I was "taught" knife in right and fork in left was right and proper. My nan always insisted Australians did it the other way round.
Mr 6 insists it's the other way round though. We're both right handed.
I tend not to stress about such things so long as people aren't shovelling their food in like it's the first meal they've had in years.

Often I simply dispense with cutlery, and eat like a pig, from a tabletop trough I have fashioned from a log I found on the beach. It's the way forward.

Try the American way: use your 'best' hand for cutting and the other hand for holding the beast still, then transfer the fork to your best hand and shovel with that. The technique works a bit differently for the spooners in that you get your mum to cut everything up small and then you use the spoon with your best hand making sure to keep your mouth close to the bowl.

In our house the two teens are both right handed but eat with fork in right hand and knife in left .Mrs marshmella is also right handed but eats the conventional way, and I'm left handed and eat the conventional way...we're a mixed up family

I generally hold my fork in my right hand and knife in my left hand. When dining somewhere where the cutlery is pre-laid out, and I pick them up, I always have a minute of confusion whilst I work out why it feels odd!

I could watch them all day, steaks cut into a series of small squares using knife and fork correctly, then the right hand gets the fork picks up the squares and waves them round in the air gesticulating while talking, then shovels it in

On holiday, we sat in a resturant and I duly re-arranged the cutlery on the table. The waiter brought our first course , looked down at the cutlery and reset it all 'properly'. I smiled and reset them again. He looked a tad puzzled, smiled and gave up.
