Actually - I think I have it sorted.
Using a combination of https://www.velomap.org/ and garmin basecamp - I can download the whole UK and clip from VeloMap just the tiles I need.

I have a Garmin 520 and experienced the openstreetmap queue like you when putting a map together a few weeks ago. It initially said about 10 day turnaround but ended up being about 72 hours.
There's clearly still an issue then
I did try and use basecamp but struggled with it. I didn't use the velomap website to help though. Would you know if there's a step-by-step guide to use velomap & basecamp? That would help me out.
I downloaded and installed the map from https://www.velomap.org/download/odbl/
Then opened Basecamp and went to 'Maps' and chose the Velomap I had installed.
Then it was just a case of putting in a suitable usb/sd drive and choosing 'Maps', 'install map' .
I was then able to select just the tiles I wanted.
A quick filename change to the output and it should work.
