Help with parts replacement

Hello,

A couple of months ago I got both wheels stolen from my bike in Greenwich (London). I used to cycle a LOT (70km a day), but I am a bit ignorant about the technical terms so apologies in advance.

My bike is a Fuji Oval concept with Shimano Tiagra. The wheels were cyclocross - Vera CityWide. Photos are attached.

I have no idea how to begin nor what to buy. I contacted a reliable cycle shop and this is what they told me:
They have only taken the wheels which is good news and easy to replace
Wheels start from around £150 and a set of Tyres begin at £40, on top of this you will need rim tape which is £6, inner tubes £12 and a cassette £35.
This gives a starting price of roughly £250.

I'm confused on why the cycle shop didn't mention the metal disc brakes visible in the attached pre-theft pictures? Will these be included in a set of new wheels?

I would like to buy all myself online. I'd like to go for thinner wheels, like a road bike. Are these going to be compatible with my bike's frame?

Can anyone advise me with what should I buy exactly?

The wheels will be 700c rims and from photos they look like a standard quick release type. The important thing is the drop out width - that will likely be prob 130 or 135. if your disk brake pads are still there then they are irrelevant - if not buy a couple of new pairs. The wheelset you choose needs to be disk brake compatible. If you do go for thinner wheels then thinner tyres will be needed. You didn't say what your budget was but Hunt wheels are excellent for the price. Hope that helps!
