Hi ! As you are looking at this project to get you out and about the simplest thing to do would be to just build the bike up as it is.

It would save a lot of time and headache sourcing parts, and would mean you could get out on it and enjoy it a lot sooner.

Building it up with the derailleur set up would allow you to decide what gearing would best suit you for the conditions in your area. If you wished to continue with the single speed idea you could simply use the limit screws to fix it to a chosen gear.
